When we first found out about my youngest child’s egg allergy, I was a bit overwhelmed. Egg is in everything tasty, it seemed. Since then, I’ve found freedom in so many options! Many of them healthy alternatives.
We practice weekly with substituting egg in biscuits, breads, cakes and cookies. Here are some regulars in our home:
My absolute favorite egg substitute is flax seeds. This substitute I learned about from my grains supplier, The Bread Beckers.
1. For each egg, combine:
- One (1) Tablespoon Flax Seed (ground in coffee grinder)
- Three (3) Tablespoons warm water
2. Another easy substitute is, for each egg, to combine:
- Two (2) Tablespoons Flour
- 1/2 tsp. oil
- 1/2 tsp. baking powder
- Two (2) Tablespoons liquid (I use water)
3. My list of favorite substitutes here.
4. Cream Cheese – always a favorite substitute for egg-laden mayonnaise is cream cheese. I replace mayonnaise in many homemade sandwich spreads and salads, like our all-time southern favorite, pimento cheese recipe.
5. Pinterest inspiration – a recent Pinterest find, this list includes salsa, guacamole and sour cream as substitutes!
With these easy substitutes, the list of what my son can eat seems to grow daily!
I’m always learning. How about you? What is your favorite egg substitute?
